Local Mum Angelika shares her quick recipe for flour-less, no butter and no added sugar chocolate cake - and it’s delicious!
Preparation time: five minutes,
cooking 25 minutes, serves 12, calories: 166
Ingredients
☞ 7.5 oz (200g) cooking chocolate 70% - 85% cocoa – 2 Lindt chocolate
☞ 1 1/4 cup (200g) pitted dates, about 20 smaller dates/10 Medjoul dates
☞ 3 large eggs
☞ 1 tablespoon (20 ml) coconut oil
☞ 1 cup (60g) of almond flour
☞ 1 whole avocado
☞ 1 Tablespoon unsweetened cocoa powder
☞ 1/2 teaspoon baking soda
☞ 1-2 teaspoon vanilla extract
Method
1). Preheat the oven to 350°F (180°C).
2). In a food processor, pulse the chocolate first then add all the other ingredients - pulsing in between.
3). Transfer the batter into a 8×8 inch (20 x 20 cm) baking tin.
4). Bake for about 25 minutes or until a toothpick comes out clean.
5). Allow to cool before serving. Serving suggestions: raspberries or strawberries with dollop of Greek yoghurt for a probiotic hit.
WARNING! This is a healthy version of chocolate cake but if you eat too much of it you it won’t be slimming. Fact! Portion size matters so 1-2 pieces a day would be my suggestion...
