Local Mum Angelika shares her recipe for the simple Tricolore salad, “The taste of Summer and Italy…"
Preparation time: 5-7 minutes
Serves: 2 people for lunch or dinner
Calories: 400 per serving
Cost: £4 per serving
Ingredients:
☞ 1x big or two smaller avocado190g
☞ 1x maxi mozzarella 250 g (or two mozzarella balls)
☞ 2-3 tomatoes depending on the size
☞ 30 g (2 tablespoons of ) pine kernels
☞ 2-3 tablespoon of olive oil
☞ 2-3 tablespoon of balsamic vinegar
☞ a big bunch of basil leaves
☞ salt and pepper to taste
Method:
Slice and arrange all the ingredients together on a big plate, sprinkle with pine kernels and basil leaves. To taste, add salt pepper, olive oil and balsamic vinegar. Serve with a slice of nice freshly baked bread (optional).
Note: Just increase quantity of each ingredient depending on how many people you are serving.
